Recipe Ingredients

  • Oil as needed
  • Ghee 2 tbsp
  • Salt to taste
  • Cumin seeds 1 tsp
  • Cinnamon 1
  • Bay leaves 1
  • Cardamom 3
  • Cloves 3
  • Pepper 1/2 tsp
  • Onion 1
  • Green chilies 2
  • Ginger garlic paste 1 tsp
  • Carrot 2 tbsp
  • Potatoes 2 tbsp
  • Beans 2 tbsp
  • Sweet corn 2 tbsp
  • Capsicum 2 tbsp
  • Cauliflower 5 florets
  • Green peas 2 tbsp
  • Tomato 1/2
  • Coriander leaves
  • Water as required
  • Garam masala 1/2 tsp
  • Cooked rice 2 cups
  • cashew 5
  • Almonds 10
  • Walnut 3
  • Dates 3
  • pumpkin seeds 1 tsp

Tips for making the recipe

  • add vegetables of your preferences.
  • I have added dry fruits if you do not like you can skip adding.

Process before cooking the recipe

  • Wash the rice nicely with water, and soak the rice in water for 20 minutes before cooking the recipe.
  • After 20 minutes drain the water from the rice and keep it aside.
  • Chop the onions and all the vegetables.
  • Make saffron milk.

1. Take a vessel, add 3 tsp of oil.

2. Add cumin seeds 1 tsp, 1 cinnamon, and bay leaves

3. Then add 3 cardamom and cloves.

4. Add 1/2 tsp of pepper, saute for a minute.

5. Now add 1 sliced onion and 2 sliced green chilies.

6. Add 1 tsp of ginger garlic paste, saute well.

7. Then add 2 tbsp of chopped carrot, potatoes, beans.

8. Add 2 tbsp of sweet corn, chopped capsicum.

9. Then add 2 tbsp of green peas, add 1/2  chopped tomato.

10. Add chopped coriander leaves, saute for 2 minutes.

11. Now add 2 tbsp of water, add 1/2 tsp of salt.

12. Add 1/2 tsp of garam masala, mix well.

13. Cover the lid and cook for 5 minutes.

14. Add 2 cups of cooked rice and 1/2 tsp of salt.

15. Mix gently, do not break the rice.

16. Take another pan, add 2 tbsp of ghee.

17. Add 5 cashew, 10 almonds, walnuts 3 chopped.

18. Then add 3 chopped dates, 1 tsp of pumpkin seeds.

19. Add 10 pistachios and paneer cubes.

20. Saute on low flame, until it’s golden brown.

21. Now add these roasted dry fruits into the cooked rice.

22. Add 2 tsp of saffron milk, cover the lid and simmer for 10 minutes.

Navratan Pulao is ready to serve hot with salad.
